CHAMPAGNE - Most Exquisite Bubbles in world
 

 


Sparkling wines are produced worldwide, but the name "Champagne" is reserved exclusively for the Champagne region. There are more than 100 Champagne houses, and many other individual vignerons (vine-growing producers) in Champagne. Most of the Champagne produced today is "Non-vintage", meaning that it is a blend of grapes from multiple vintages.

Wines from the Champagne region were known before medieval times. In France the first sparkling Champagne was created accidentally. The wine was called “the devil's wine” (le vin du diable) due to bottles explosion or popped cork. The muselet was then invented to prevent the corks from blowing out.

Méthode Champenoise is the traditional method by which Champagne is produced. After primary fermentation and bottling, a second alcoholic fermentation occurs in the bottle. This second fermentation is induced by adding several grams of yeast and several grams of rock sugar.

A Cross-Over Project - Burgundy X Champagne

Olivier Leflaive from Burgundy and Erick de Sousa from Champagne revealed their new production in 2015. Olivier Leflaive, is joint-founder, with his brother Patrick, of the House of Olivier Leflaive in Puligny-Montrachet in the heart of Côte de Beaune. Erick de Sousa, notwithstanding his love of Burgundy wines, is the mastermind behind Champagnes de Sousa from Avize in Côte des Blancs. Champagne Valentin Leflaive represents a unique interpretation of champagne and its grape varietals.

The Valentin Leflaive Blanc de Blancs Extra-Brut is composed exclusively of Chardonnay from Côte des Blancs. Each cuvée is blessed with outstanding minerality and complexity thanks to the Burgundy barrels used during vinification and to the meticulous attention of Erick de Souza.
